cabanossi sausage

quick-rising active dry yeast

Preparation steps

1.
Grease a 900g|2lb loaf tin.
2.
Heat the oil in a frying pan and cook the sausages for 5-7 minutes. Remove from the pan and leave to cool.
3.
Put the dry ingredients in a mixing bowl and stir to combine.
4.
Whisk together the eggs and water and stir into the dry ingredients with the butter. Mix well to form a soft dough.
5.
Shape into a ball and put into an oiled bowl. cover with oiled cling film and leave to rise in a warm place for about 1 hour.
6.
Turn out onto a floured surface and knead gently. Roll into a rectangle 2.5cm| 1" thick and 23cm|9" long.
7.
Place the sausages down the cenre and roll the dough tightly around them.
8.
Put into the tin and cover as before. Leave to rise in a warm place for 30-40 minutes.
9.
Heat the oven to 190°C (170° fan) 375°F gas 5.
10.
Beat together the egg yolk and water and brush over the top of the loaf. bake for 30-35 minutes until golden and cooked through. Place on a wire rack to cool.
