gluten-free bread flour (plus extra for dusting)
1 ½ teaspoons
quick-rising active dry yeast
2 tablespoons
butter (melted)

warm milk
cup
superfine caster sugar
1 ¼ cups
1 teaspoon
¾ cup
gluten-free Marzipan (chopped)
1 cup
1 tablespoon

Preparation steps

1.
Line a baking tray with non-stick baking paper.

Mix together the flour and the yeast in a mixing bowl. Add the sugar, mixed fruit, spice and marzipan and stir until blended.
3.
Stir in the melted butter and milk to form soft, but not sticky dough.
4.
Turn the dough out onto a surface lightly dusted with flour and knead until smooth and the fruits are evenly distributed.

Shape the dough into a flat log and place on the baking tray. Cover with oiled cling film and leave to rise in a warm place for about 30 minutes.
6.
Heat the oven to 200°C (180° fan) 400°F gas 6.
7.
Bake for about 20-25 minutes until golden brown, Allow to cool slightly.
8.
Sift the icing sugar into a bowl and mix with just enough lemon juice to form a stiff icing, spread this on the top of the stollen while it is still warm.
