Ingredients

For the meat
1 kilogram Veal fillet
1 tablespoon vegetable oil
1 honey
1 tablespoon soy sauce
salt
freshly ground peppers
2 tablespoons clarified butter
For the vegetables
250 grams carrots
250 grams Snow peas
200 grams Broccoli
1 stalk Leeks
1 jar Bamboo shoots
½ bunch Thai basil
4 tablespoons sesame oil
2 tablespoons Shelled peanut
salt

For the garnish
200 grams Udon Noodle
1 honey (to glaze)

Preparation steps

1.

For the meat: Cut beef on the fat side crosswise and tie if necessary with kitchen twine. Combine honey with soy sauce, oil, salt and pepper and rub meat with it. Preheat oven to 250°C (approximately 475°F).

Place meat with fat side up in a greased baking dish and slide into the oven and cook for about 30 minutes.

Remove meat from the oven, glaze with honey, wrap in aluminum foil and let rest for 15-20 minutes.

For the garnish: Cook noodles in plenty of boiling salted water according to package label.

For the vegetables: Rinse snow peas, cut in half if needed. Peel carrots, rinse and trim leek and broccoli, drain bamboo shoots and cut everything into matchsticks. Rinse basil, shake dry and cut into strips. Heat oil in a wok and fry vegetable sticks and peanuts for 3 minutes then add snow peas and fry briefly. Stir in basil and noodles, season with salt and pepper.

Place vegetables on a serving dish, cut meat into thin slices, arrange on the vegetables and serve.
