For the batter
280 grams Pastry flour
110 grams sugar
2 teaspoons Baking powder
¼ teaspoon salt
280 grams Yogurt (0.1% fat)
1 egg
60 milliliters vegetable oil
1 packet Vanilla sugar
1 packet Lemon extract
For the glaze
150 grams powdered sugar
green Food coloring
2 tablespoons lemon juice
Sugar blossom

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Grease a muffin tin with butter or oil.

For the batter, mix the flour, sugar, baking powder and salt. Mix the yogurt, egg, oil, vanilla sugar and lemon extract. Gradually stir the flour mixture into the yogurt mixture.

Pour the batter into the muffin tin. Bake for 20-25 minutes, until golden brown.

For the glaze, mix the powdered sugar and lemon juice. Add the green food coloring. Spread the glaze over the cooled muffins. Decorate with sugar blossoms, let dry and serve.
