2 kilograms ham (hind leg)
1 onion (peeled and roughly chopped)
1 carrot (peeled and roughly chopped)
1 stalk Leeks (cleaned and cut into pieces)
1 teaspoon peppercorns
1 teaspoon Coriander
2 bay leaves
1 Cinnamon stick
2 tablespoons cloves
4 tablespoons brown sugar
200 milliliters Dark beer
4 tablespoons honey
1 teaspoon mustard powder

Preparation steps

Prepare ham for cooking by tying with kitchen string as needed. Place ham in a large pot. Rinse onion, carrot and leek. Brush, peel or coarsely chop as needed. Add to ham along with peppercorns, coriander seeds, bay leaves and cinnamon stick. Pour in cold water until meat is covered. Bring to a boil and simmer, covered, for about 2.5 hours.

Remove ham from broth and cool slightly. Remove kitchen string and rind. Insert cloves into fat layer. Place ham in roasting pan.

Preheat the oven to 160°C (approximately 325°F).

For the glaze, heat brown sugar, beer, honey and mustard powder. Bring to a boil. Brush onto ham. Heat in the oven for about 40 minutes, occasionally brushing on additional glaze, until ham is roasted brown and crispy.

Before cutting to serve, allow to cool a little. Serve still warm or cold.
