8 egg yolks
100 grams sugar
4 egg whites
80 grams Pastry flour
20 grams cornstarch
2 teaspoons cocoa powder
2 tablespoons Apricot jam
1 tablespoon water

Jam (such as orange marmalade, apricot jam, etc.)

Preparation steps

Mix egg yolks with half of sugar until creamy. Mix egg whites with remaining sugar until stiff and fold into egg yolk mixture. Sift flour and cornstarch over egg mixture and fold into batter. Remove 1/3 of dough and mix with cocoa powder. Preheat oven to 220°C (approximately 425°F) and place chocolate batter into bottom of tart pans lined with paper cups, each about 10 cm (approximately 4 inches) diameter. Place plain dough over chocolate dough to fill cup. Bake in preheated oven on middle rack for about 8-10 minutes. Allow to cool and remove paper liner. In a saucepan, boil apricot jam and water until jam dissolves and pass through a sieve and allow to cool. Pour a little cooked jam over surface and fill with desired fruit. Brush fruit with apricot jam.

If desired, substitute orange marmalade for apricot jam and use fresh fruit, as desired. To serve, arrange on dessert plates.
