Glazed Currant Star Cookies
Heat the sugar, honey and 50 ml of water in a saucepan until it reaches 75°C (approximately 170°F). Transfer to a large bowl and stir in the flour, egg, gingerbread spice and baking powder. Knead to form a smooth dough.
Roll the dough out onto a floured surface to about 05. cm thick. Cut into stars using a cookie cutter. Spread the currant jam onto the center of half of the stars. Brush the edges with the beaten egg, top with the remaining stars and press to secure closed. Place the stars on a baking sheet lined with parchment paper and bake in an oven preheated to 200°C (approximately 400°F) for 12-15 minutes, until golden brown. Mix the powdered sugar and water together until smooth and brush onto the stars. Allow the glaze to harden and serve.
