160 grams Pastry flour

Preparation steps

In a pot, combine the water with the milk, butter, salt and sugar. Bring to a boil. Stir in the flour. Continue cooking over low heat, while stirring, until the dough separates from the side of the pot. Add the eggs 1 at a time until incorporated and the dough is smooth.

Cut greaseproof paper into 10 cm (approximately 4 inch) squares. Spread the squares with butter. Place the dough into a piping bag fitted with a large star tip and pipe a circle onto each square of parchment paper.

Heat the clarified butter in a saucepan until the butter bubbles when a wooden spoon is inserted. Add the dough circles to the hot fat and fry until golden brown on both sides, turning once, about 4 minutes. Remove with a slotted spoon and drain on paper towel.

In a bowl, stir 150 grams (approximately 1/2 cup) of powdered sugar with the lemon juice until smooth. Drizzle over the donuts once cooled. Allow to dry. Dust with the remaining powdered sugar before serving.
