1 teaspoon lemon juice
300 grams powdered sugar
400 grams ground almonds (plus more if necessary)
1 teaspoon cinnamon
1 centiliter Cherry brandy

Preparation steps

In a bowl, beat the eggs with the lemon juice until soft peaks form. Continuously beat the mixture, while adding a spoonful of sugar at a time, until the egg whites are very stiff and glossy. Reserve 1 cup for the glaze.

In a bowl, combine the egg white mixture with the almonds, cinnamon and cherry brandy until a smooth dough forms. The dough should be soft and easy to roll out. Cover and allow to chill in the refrigerator for 1 hour.

Preheat the oven to 150°C (approximately 300°F). Line a baking sheet with parchment paper.

Lightly dust a work surface with sugar. Roll the dough to 1 cm (approximately 1/4 inch) thick. Cut out stars and arrange them side-by-side on the baking sheet. Brush the cookies with some of the reserved egg white glaze and bake until set, about 10-15 minutes. The stars will be delicate and soft, and the glaze will remain white. Cool on a wire rack.
