1 Skillet, 1 Bowl, 1 Small bowl, 1 Wok, 1 Cutting board, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Peeler, 1 Fine grater, 1 Whisk, 1 Slotted spatula, 1 Salad spinner, 1 Aluminum foil, 1 Lid, 1 Large knife, 1 Wok rack

Preparation steps

Heat the oven to its lowest setting. Line 3 large baking trays with non-stick baking paper.

Whisk the egg whites until frothy.
3.
Whisk in the salt, cream of tartar, and vanilla.
4.
Gradually add the cocoa, sugar and cinnamon, a spoonful at a time, whisking constantly until stiff and glossy.
5.
Place tablespoonfuls onto the baking trays, about 2.5cm|1" apart.
6.
Bake for 1 1/2 hours, then turn off the oven, open the door slightly and cool completely in the oven.
7.
To decorate: sift the icing sugar into a bowl and stir in just enough water to make a thick coating icing.
8.
Spoon on top of the biscuits and sprinkle with pistachios. Leave to set.
