Glazed Cherry Muffins
- For the batter
- 175 grams softened Margarine
- 175 grams sugar
- 3 eggs
- vanilla extract
- 175 grams Pastry flour
- 2 teaspoons Baking powder
Preheat the oven to 200°C (approximately 350°F). Line the muffin tin (12 wells) with paper cups.
For the batter, beat the margarine, sugar, eggs and vanilla until fluffy.
Mix in the flour and baking powder. Pour the batter into the muffin tin. Bake for 15-20 minutes, until golden brown. Remove from the oven and cool completely.
For the topping, mix the powdered sugar and boiling water into a thick glaze. Brush the muffins with the glaze. Garnish with a candied cherry, let dry and serve.
