Glazed Butter Cookies
For the butter cookies: In a bowl, mix the flour with the sugar, 1 pinch of salt and the lemon zest. Press a well into the center. Bean the egg and place in the well. Cube the butter and distribute over the flour. Use hands to knead into a smooth dough. Shape into a disk, wrap in plastric wrap and refrigerate for 30 minutes.
Preheat the oven to 180°C (approximately 350°F).
Roll the dough on a floured surface to 0.5 cm (approximately 1/4 inch) thick. Cut into desired shapes and place on a parchment-lined baking sheet. Bake until light golden, about 8-10 minutes. Remove from oven, remove parchment paper and cookies from the baking sheet and allow to cool completely.
For decoration: In a bowl, stir the powdered sugar with the lemon juice until smooth. Glaze the cookies and sprinkle with the sugar and pearls. Allow to dry before serving.
