Glass Noodles with Beef and Vegetables

- 100 grams Glass noodles
- 2 carrots
- 200 grams Spinach
- 1 Leek
- 200 grams Beef (steak)
- 250 milliliters Beef broth
- 2 Tbsps light soy sauce
- sesame oil
- 2 tsps Sesame seeds
- salt
- freshly ground peppers
Place the beef in a pot, and cover with the broth and soy sauce. Simmer for 10 minutes. Remove from heat and poach until cooked through. Remove and thinly slice.
Peel the carrots and cut into matchsticks. Rinse the spinach and drain. Rinse the leek, trim the dark green part and cut the light green and white part into thin strips.
Reheat the broth mixture. Add the carrots and leeks, and simmer for 4 minutes. Remove with a slotted spoon and allow to drain. Add the spinach and cook for 4 minutes. Stir in the soy sauce. Season the broth with sesame oil, salt and pepper to taste.
Cook the glass noodles according to the package directions. Drain.
Place the beef, vegetables and glass noodles into the broth mixture, and heat until warmed through. Serve sprinkled with sesame seeds.
