Glass Noodle Salad with Herring
Cook the glass noodles in boiling water for 1 minute, then rinse in cold water and drain.
Cut the herring crosswise into strips. Peel the apple, cut into quarters, remove the seeds and cut into cubes. Immediately sprinkle the apple cubes with 1 tablespoon lime juice.
Rinse and trim the scallions and chop finely. Rinse the chile, remove the seeds and finely chop. Stir the yogurt with lime juice, season with salt, pepper and sugar and mix with the herring, apple, scallions and chile. Cut the glass noodles with kitchen scissors into bite-sized pieces and stir in. Arrange the salad in bowls and serve garnished with chives.
(For decoration, slice very thin pieces from the middle of a large carrot and cut into shapes such as butterflies and arrange on the salad).
