1 egg yolk
1 tablespoon Cocoa
1 lemon (zest)
2 teaspoons Gingerbread spice
2 teaspoons potatoes
2 tablespoons Rum
300 grams Pastry flour
100 grams Almond slivers
50 grams finely chopped Candied lemon
50 grams raisins
For the topping
130 grams powdered sugar
3 tablespoons lemon juice
Almond slivers
30 candied Cherries

Preparation steps

Heat a pot of honey, brown sugar, and butter. Stir until the sugar has dissolved. Let cool. Stir the egg yolks, cocoa, lemon zest, and gingerbread spice with the honey. Stir the potash with the rum until smooth and stir into the dough. Fold in the flour, almonds, lemon zest, and raisins. Mix all the ingredients into a smooth dough.

Dust a work surface with flour. Roll out the dough until 1 cm (approximately 1/3 inch) thick. Cut out 8 cm (approximately 3 inches) in diameter. Preheat the oven to 180°C (approximately 350°F). Transfer the circles onto the parchment-lined sheet tray. Bake for 20 minutes. 

For the topping: Mix the powdered sugar until smooth with the lemon juice. Spread the glaze over the cooled gingerbread and decorate with candied cherries and almonds.
