Preparation steps

For the dough: Melt butter in pieces with honey and sugar in a saucepan and heat while stirring until sugar has dissolved. Place in a large mixing bowl and let cool. Then add almonds, 400 grams (approximately 14 ounces) flour, spices and the egg and with the dough hook of an electric hand mixer thoroughly knead (add a little flour if needed). Mix baking soda with rum in a small bowl until smooth then add to dough and continue kneading until dough is no longer sticky and shines.

Cover bowl with plastic wrap and let rest in refrigerator overnight.

Preheat oven to 180°C (approximately 350°F).

Line a baking sheet with parchment paper. Roll out dough on a floured surface and cut out star shapes. Place on baking sheet and bake for 15-20 minutes. Remove from oven and carefully remove from baking sheet onto a wire rack to cool.

For the icing: Stir powdered sugar with lemon juice to a thick and smooth paste. Decorate gingerbread with a small piping bag and allow to dry, then serve.
