For the dough
150 grams butter
250 grams honey
250 grams brown sugar
100 grams ground almonds
400 grams Pastry flour
1 teaspoon Ground cinnamon
2 teaspoons Gingerbread spice
1 whole lemon (zested)
1 tablespoon Cocoa
1 egg
1 teaspoon potatoes
2 tablespoons Rum
1 egg yolk
For the icing
1 egg white
200 grams powdered sugar
For decorating
80 grams dark Couverture
30 grams red Marzipan

Preparation steps


Combine the butter, honey and brown sugar in a saucepan and heat until the butter has melted and the sugar has dissolved. Pour the mixture into the bowl of a stand mixer and let cool. 


Add the ground almonds, flour, spices, lemon zest, cocoa powder, egg and egg yolk and mix with the dough hook attachment until smooth. Stir the baking soda and rum together until smooth and add to the dough. Continue mixing until smooth and shiny. Cover the bowl with plastic wrap and refrigerate overnight. 


Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper. 


Roll the dough out onto a floured surface cut into snowmen shapes using a cookie cutter or graduated size circles. Place onto the prepared cookie sheet and bake for 15-20 minutes, until golden brown. Remove from the oven and cool on a wire rack. 


For the icing: Beat the egg whites with the powdered sugar until stiff. Spread onto the cooled cookies. Melt the dark chocolate in a double boiler and transfer to a freezer bag with the tip cut off. Pipe the chocolate onto the cookies to make eyes, a mouth and buttons. Shape the red marzipan into triangles and to make the nose. Allow the icing and chocolate to harden and serve.
