250 grams Pastry flour
1 teaspoon Baking powder
175 grams cane sugar
1 pinch salt
1 egg
1 tablespoon honey
1 teaspoon cinnamon
½ teaspoon Gingerbread spice
3 tablespoons milk
60 grams butter
200 grams powdered sugar
2 teaspoons lemon juice
50 grams Dark couverture chocolate
Colorful Icing
1 tablespoon raisins

Preparation steps

Mix flour, baking powder, brown sugar and salt with egg, honey, cinnamon, gingerbread spices and milk in a mixing bowl.

Divide butter into small pieces, add to bowl and mix well using the dough hook of an electric hand mixer.

Knead dough on a floured work surface with hands until smooth. Roll out flat and cut out 5 round gingerbread pieces 10 cm (approximately 4 inches) in diameter. Then cut out 5 smaller gingerbread pieces about 5 cm (approximately 2 inches) in diameter. Then cut out 5 snowman hats using a template. Line a baking sheet with parchment paper and place 5 large gingerbread circles in a row along one side. Place 5 smaller circles on top, pressing edges together to hold. Press hats on top of smaller circles, pressing edges together to hold.

Bake in a preheated oven at 180°C (approximately 350°F) for about 15 minutes. Remove and cool on a wire rack.

Mix powdered sugar with lemon juice and a little water until syrupy. Brush over gingerbread snowmen. Place remaining icing into a piping bag with a round nozzle and pipe outlines around snowmen. Melt couverture over a hot water bath and use to decorate snowmen hats. Decorate snowmen with colored icing as desired and raisins to taste. Dry and serve.
