125 grams liquid honey
60 grams sugar
50 grams butter
250 grams Pastry flour
2 teaspoons ground ginger
2 teaspoons cinnamon
½ teaspoon ground anise seed
½ teaspoon Ground clove
1 pinch salt
¼ teaspoon potatoes
¼ teaspoon Ammonium carbonate
50 grams candied orange (minced)
For the decoration
250 grams powdered sugar
2 tablespoons lemon juice
1 tablespoon water
Hazelnuts

Preparation steps

For the cookies: Combine honey, sugar and butter in a pan over medium heat until sugar is dissolved. Allow to cool. Combine flour and spices. Add potash and hirschhorn to syrup and fold in remaining ingredients. Let rest, covered, overnight in the refrigerator.

Preheat the oven to 180°C (approximately 350°F).

Roll out dough on a lightly floured surface to 4-5 mm (approximately 1/6 inch). Use a cookie cutter to cut out mice shapes and place on a baking sheet lined with parchment paper. Bake until golden brown, about 20-25 minutes. Remove from oven and let cool. Combine powdered sugar with water and lemon juice and mix until smooth. Put in a piping bag and use to decorate mice. Use hazelnuts to decorate, as desired. Let dry completely and serve.
