125 grams honey
200 grams sugar
150 grams butter
40 milliliters Whipped cream
2 teaspoons Gingerbread spice
400 grams Pastry flour
100 grams cornstarch
1 tablespoon cocoa powder
1 teaspoon Baking powder
For decoration
150 grams milk Couverture
200 grams Dark couverture chocolate
powdered sugar (for dusting)

Preparation steps

For the dough: Combine the honey, sugar, butter and cream in a saucepan. Gently heat, stirring until the sugar has dissolved. Transfer to a mixing bowl and let cool. Mix in the remaining dough ingredients and knead until combined. Cover with plastic wrap and chill for 30 minutes in the refrigerator. Preheat the oven to 180°C (approximately 350°F).

Divide the dough into 2 portions and roll out to about 5 mm (approximately 1/8-1/4 inch) thick on a floured work surface. Cut out heart shapes and arrange on a baking sheet lined with parchment paper. Bake for 10-12 minutes. Remove from the oven and let cool.

To decorate: Chop the chocolate and melt, separately, over a hot water bath. Dip the gingerbread cookies in the chocolate then return to the baking sheet to set. Cut or grate the remaining chocolate into curls and use to decorate the cookies. Serve dusted with powdered sugar.
