2 ripe Mangoes
50 grams sugar
1 pomegranate

Preparation steps

Beat the egg yolks and egg until fluffy.

Heat the sugar with 50 ml water (approximately 3 tablespoons) until the sugar has dissolved, and quickly stir into the egg mixture. Scrape the vanilla bean and add to the mixture, beat until cold, then stir in the rum. Beat the cream until stiff and carefully fold in. Finely crumble the gingerbread and mix in. Spoon the mixture into a metal tray, smooth and freeze for 4 hours.

Peel the mangoes, cut the pulp from the core and finely dice the flesh of one mango and puree the remaining pulp with the sugar. Halve the pomegranate and remove the seeds. To serve, scoop out the frozen custard with a large ice cream scoop. Place some mango puree on a plate, top with the custard and garnish with diced mango, pomegranate seeds, gingerbread hearts and star anise.
