The beaverle satisfies the desire for sweets in a healthier way: wholemeal flour provides an extra amount of intestine-healthy fibre, unsaturated fatty acids, B vitamins and minerals.

In contrast to cookies and biscuits, beaver beans should not be baked crisp. The biscuit is cooked when it gets a little colour.

125 grams honey
75 grams cane sugar
50 grams butter
2 eggs
250 grams Pastry flour
2 teaspoons Baking powder
2 teaspoons Gingerbread spice
400 grams Marzipan

Preparation steps

Combine the honey, sugar and butter in a saucepan over low heat. Stir until the sugar has completely dissolved then let cool. Add one egg. Mix the flour with the baking powder and spice mix then mix into the honey mixture until combined. Cover and chill for one hour.

Preheat the oven to 180°C (approximately 350°F). Roll out the dough on a floured work surface to 3 mm (approximately 1/8 inch) thick. Form marzipan into a 1 cm (approximately 1/3 inch) thick log. Place the marzipan on the dough and roll up to enclose the marzipan completely. Separate the remaining egg. Brush dough edges with the egg white and press together to seal.

Cut the roll diagonally into triangles, brush with egg yolk, arrange on a greased baking sheet and bake for about 20 minutes. Remove from oven, let cool then serve.
