50 grams candied orange
100 grams Candied lemon
160 grams powdered sugar
3 eggs
1 teaspoon ground cinnamon
1 generous pinch Ground clove
1 generous pinch ground Mace
1 lemon (zest)
100 grams ground unpeeled almonds
100 grams Hazelnuts
50 round Wafer 5–7 cm (approximately 2 inches)
For decoration
1 lemon juice
50 grams powdered sugar
25 Red Maraschino cherry

Preparation steps

Preheat the oven to 150°C (approximately 300°F), Foam eggs with icing sugar and add spices, lemon peel, nuts and almonds, then mix in finely chopped candied orange and lemon.

Line baking sheet with parchment paper. Spread batter into ovals and flatten with a spoon. Bake for 25–30 minutes and let cool.

For decoration, add lemon juice and icing sugar to 1–2 teaspoons of water and lightly coat the gingerbread. Top each with 1/2 of a cherry.
