2 teaspoons finely grated Lemon peel
2 tablespoons Rum
80 grams Candied lemon
¼ teaspoon Baking powder
100 grams ground almonds
100 grams Hazelnuts
50 grams Pastry flour
20 Wafer about 9 cm (approximately 3.5 inches) diameter
75 grams slivered almonds
200 grams powdered sugar
1 tablespoon melted butter
1 tablespoon lemon juice
1 teaspoon milk
3 tablespoons Granulated sugar

Preparation steps

Beat the eggs, sugar, spices and rum together until creamy. Finely chop the lemon peel and stir into the batter along with the baking powder, ground almonds, hazelnuts and flour. Mix until smooth. Cut the baking wafers into a Christmas tree shapes using a cookie cutter. Spread the batter onto the tree shaped wafers about 1 cm (approximately 1/2 inch) high.

Place on a baking sheet lined with parchment paper and refrigerate overnight.

The next day, preheat the oven to 160°C (approximately 320°F). Bake the cookies for 30 minutes, until lightly golden. Remove from the oven and cool on a wire rack.

Toast the almond slivers in a dry skillet until golden brown. Whisk together the powdered sugar, melted butter, lemon juice and milk until smooth. Transfer to a freezer bag with the tip cut off and pipe decoratively onto the cooled cookies. Top with the toasted almond slivers and sprinkle with granulated sugar.
