300 grams Rye flour (type 997)
100 grams sugar
3 tablespoons brown sugar
50 grams ground almonds
1 tablespoon finely chopped candied orange
150 grams honey
1 generous pinch cinnamon
1 generous pinch Nutmeg
1 teaspoon Gingerbread spice
1 pinch Cardamom
1 pinch ground cloves
1 egg
1 egg yolk
4 grams potatoes
4 grams Ammonium carbonate
For the topping
100 grams powdered sugar
1 egg white

Preparation steps

Mix the flour, sugar, brown sugar, almonds, cinnamon, nutmeg, cardamom, cloves and gingerbread spice together in a bowl. Make a well in the center. Place the honey and candied orange peel in the well. Beat the egg and egg yolk and add into the well. Add the potash, Hirschhorn salt and 1-2 tablespoons of cold water. Knead into a smooth dough.

Shape the dough into balls and place on a lined baking sheet with some distance between them. Bake for about 20 minutes at 180°C (approximately 350°F).

Remove the gingerbread from the oven and cool on a wire rack. Mix the powdered sugar and egg whites. Spread on the gingerbread and let dry before serving.
