To make the gingerbread spice simply mix together 100 g ground cinnamon 75 g ground cloves 50 g ground nutmeg 75 g ground ginger 125 g ground fennel seeds 125 g ground coriander seeds 125 g ground anise

Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line two baking trays with grease-proof paper.

To make the dough, bring the water and the honey to the boil and allow to cool. Place the flour and gingerbread spice in a large bowl and add the mixed peel. Make a well in the middle and pour the honey-water mixture into it. Knead everything into a smooth dough using an electric whisk with dough hooks. Towards the end mix the baking soda in well then cover the dough with tin foil and allow to rest in a cool place for 1 or 2 days. This will make the dough extra fluffy. The dough is sufficient for the house and accessories, e. g. fence, chimney, window shutters and maybe also for a base plate.

Roll out half of the dough onto each baking tray approx. 1 cm thick. Pierce with a fork a few times and bake for 20-30 minutes until golden brown.

For the house two large rectangles are required for the side walls (e. g. 10 x 20 cm) and two slightly bigger rectangles for the roof (e. g. 15 x 25 cm). For the front and back walls rectangles with a point to form the roof are required (e. g. 16 x 20 cm). It is easier to cut the cake with a cardboard stencil. Accessories can be made from the left over dough (e. g. a chimney).

To make the glaze sieve the icing sugar into a bowl and stir in the egg white and the lemon juice to make a spreadable paste. Stick the house together using the icing as a glue. Allow each part to dry well before adding the next part. When finished brush the whole house or just the roof with the icing so that it looks like freshly fallen snow. Decorate the house while the icing is still wet.
