Ingredients

For the dough
4 eggs
100 grams sugar
100 grams Pastry flour
1 teaspoon Baking powder
For the filling
7 sheets gelatin
500 grams
sugar (to taste)
1 tablespoon cocoa powder
For the cream
300 grams Whipped cream
150 grams Dark chocolate
2 tablespoons Chocolate
For serving
1 leaf Gold foil
cocoa powder
Red currant
5 Cape gooseberries

Preparation steps

1.

For the dough: Separate eggs. Beat yolks with half the sugar until white and foamy. Beat in 2-4 tablespoons hot water. Beat egg whites until stiff, sprinkle in remaining sugar until glossy.

Combine flour and baking powder, then fold into egg yolk mixture. Fold whites into dough.

Spread dough into a baking sheet lined with parchment paper nd bake in an oven preheated to 180°C (approximately 350°F) for about 10 minutes.

For the filling: Soak gelatine in cold water. Combine compote and cocoa powder, then season with sugar to taste. Dissolve gelatine in a small saucepan over low heat and stir in a bit of compote. Fold into remaining compote, then set aside.

Remove dough from the oven, release onto a sugared tea towel and peel off parchment paper. Roll up with the tea towel. 

6.

Unroll cake and spread filling onto cake. Roll up again and chill for at least 3 hours.

7.

For the cream: Melt chocolate over a double boiler, remove from heat and let cool slightly. Beat cream until stiff, fold in cooled chocolate, then stir in chocolate chips. Set aside in a cool place.

8.

Slice well-chilled roulade into 3 sections and cover each with cream and top with gold leaf. Garnish with fruit and serve dusted with cocoa.
