German Marzipan Fruit Bread Bites

- For the dough
- 1 ¾ cups Bread flour
- 2 tablespoons Yeast (OR 1 tsp dried yeast)
- ¼ cup lukewarm milk
- 3 tablespoons sugar
- 1 tablespoon Vanilla sugar
- grated lemon zest
- ½ cup butter
- 1.333 cups mixed, chopped Citrus peels
- 0.333 cup raisins
- 0.333 cup dried Cranberry
- 0.333 cup chopped almonds
Sieve the flour into a bowl and make a well in the middle. Add the yeast to the well and stir in some milk and some flour from the edge. Cover and leave to rise for 30 min then mix together well along with the remaining milk, the sugar, vanilla sugar, lemon zest, butter, mixed peel, fruits, nuts and a pinch of salt. Cover and leave to rise for another 30 min.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and line a baking tray with grease-proof paper.
Roll out the dough onto the prepared baking tray approx. 2-3 cm thick. Bake for around 25 mins and cut into cubes while still warm.
Melt the cooking chocolate in a bain-marie and drizzle onto the cake cubes. Decorate with a gummy star and leave to dry. Serve on a platter.
