Preparation steps

Peel and crush the garlic and mix with the egg yolk and a pinch of salt in a bowl. Mix with an electric hand mixer and gradually stir in about 3 tablespoons of oil.

Mix the remaining oil with water and lemon juice and slowly add it to the garlic, stirring constantly.

Serve the aioli seasoned to taste.
