Funny Fruit Pancakes
Combine the eggs, ricotta, sugars and cinnamon until smooth. Mix the flour with baking powder and salt. Combine wet and dry mixtures and stir everything into a smooth dough. Place in a nonstick skillet 1-2 heaping tablespoons of batter per cakes and cook until golden brown on both sides over a low heat for 1-2 minutes each.
Keep finished pancakes warm in the oven (80°C). Before serving, dollop with whipped cream and put on funny faces from strawberry, banana pieces and raisins.
