For the muffins
3 eggs
¾ cup butter
¾ cup caster sugar
¾ cup all-purpose flour
½ tsp Baking powder
¾ cup ground Hazelnuts
1 tsp vanilla extract
To decorate
12 cubes soft Toffee (or fudge)
powdered sugar

Preparation steps

1.
For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Grease 12 muffin tins.

Beat together the eggs, butter and sugar in a mixing bowl until light and creamy. Sift in the flour and baking powder and stir into the mixture with the ground hazelnuts and vanilla until blended.
3.
Spoon the mixture into the tins and bake for about 20 minutes until golden. (Test to see if they are done by inserting a skewer or cocktail stick - it should come out clean). Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
4.
Push a cube of toffee into each muffin and sift icing sugar over the top.
