- 4 ozs Cape gooseberries
- 2 sprigs mint (small stems)
- 2 preserved Hibiscus flower (from a jar)
- 24 ozs Sparkling wine (Champagne or Sparkling water, well chilled)

Preparation steps

Set aside 2 gooseberries. Remove the paper-like husks from the rest, put in a sieve and rinse well.

Drain, place in a high vessel and puree with an immersion blender.

Rinse mint and shake dry. Scoop the gooseberry puree in 2 of the champagne glasses.

Take hibiscus flowers gently out of the jar and spread in bottom of the other 2 champagne glasses. Add 1 teaspoon of the syrup to the glasses.

Fill the 2 champagne glasses with gooseberry puree with sparkling wine. Decorate each glass with 1 gooseberry with the husk attached and 1 stalk of mint.

Fill the hibiscus flower glasses with sparkling wine and serve cocktails immediately. The hibiscus flowers "bloom" in the first few minutes after adding the wine and the dramatic effect creates "ahs" and "ohs" among guests.
