700 grams sour Russet apple
200 grams cane sugar
125 grams chopped Hazelnuts
100 grams dried Apricot
100 grams Plum
100 grams raisins
150 grams butter
3 egg yolks
250 grams Whole wheat flour
250 grams Rye flour
1 ½ packets Baking powder
2 tablespoons cocoa powder
2 teaspoons cinnamon
1 teaspoon ground cloves
2 tablespoons Rum
3 teaspoons grated Lemon peel

Preparation steps

1.

Peel apples, cut into quarters, remove cores and coarsely grate. Mix with sugar, cover and let sit overnight.

Cut apricots and plums into small cubes, mix with raisins and nuts and combine with apples. Mix butter and egg yolks until frothy and add to mixture.

Mix both types of flour with baking soda, cocoa, cinnamon and cloves. Gradually mix apple mixture and dry ingredients together. Add rum and lemon zest.

Grease baking dish with butter and dust with flour. Add batter, smooth out and bake in a preheated oven at 200°C (approximately 400°F) for 1 hour.

Remove fruitcake and cool for 10 minutes in baking dish. Then remove from dish and cool completely on a wire rack. To serve, sprinkle with powdered sugar and cut into slices.
