Preparation steps

For the filling: Chop the dried and candied fruit in very small cubes. In a bowl, mix the yeast, milk and 1/2 teaspoon sugar until smooth.

In the bowl of an electric mixer, mix the flour, remaining sugar, salt, butter, orange zest, mixed spices and dissolved yeast and knead until smooth. Mix in the dried fruit, nuts and raisins. Cover the dough and set aside to rise in a warm place for 45 minutes.

For the dough: Sift the flour onto a wooden pastry board. Form a well in the center. Stir the yeast with 1/2 teaspoon of sugar and a little (lukewarm) milk until smooth. Place in the center and mix with a little flour. Sprinkle the dough with flour. Cover and set aside for 20 minutes. When the dough has risen to twice its height, add the remaining ingredients.

Knead thoroughly, adding a little flour as necessary, until the dough is no longer sticky but still soft. Cover and set aside in a warm place for 30-40 minutes. Halve the dough. Roll out one-half of the dough. Sprinkle it with flaked almonds and press them lightly into the dough. Line a well greased and sugared 12-inch springform pan with the dough.

Knead the dough for the filling again. Put the dough into the springform pan and press gently.

Roll the second half of the dough into a flat circle and place on top of the filling, firmly press the edge and brush with the beaten egg yolk.

Bake in a preheated oven at 180°C (approximately 350°F) until a toothpick inserted in the center comes out clean, about 1 1/4 hours. Cover with aluminum foil, if the cake is browning too quickly. Remove and let cool.

Serve garnished with candied fruit.
