1 teaspoon Ground cinnamon
1 Vanilla bean
4 eggs
400 grams Pastry flour

1 pinch salt
75 milliliters milk (if needed)

200 grams Apricot jam
2 tablespoons Rum
100 grams Brazil nut
100 grams almonds (peeled)
100 grams dried Apricot

Preparation steps

1.

Place the raisins and golden raisins in a sieve. Rinse in hot water. Place in a bowl. Chop the apricots, cherries, orange and lemon. Mix with the rum and raisins. Let sit for about 30 minutes. Mix in the almonds.

Preheat the oven to 180°C (approximately 350°F). Grease the springoform pan with butter and sprinkle with flour.

Beat the butter with a handheld mixer until it attracts tips. Sprinkle in the sugar, cinnamon and vanilla, stirring constantly. Break the eggs and add one by one. Stir until frothy. Mix the flour, baking powder and salt. Stir into the butter mixture. Stir in the milk. Quickly knead into a smooth dough. Mix in the fruit. Pour the dough into the pan. Bake for about 50 minutes, until a toothpick inserted into the center comes out clean. Cover with alumnium foil, if desired.

Remove from the oven and let cool slightly. Carefully remove the cake from the pan and place on a cooling rack. Heat the apricot jam and pass through a sieve. Stir in the rum and sprinkle about half over the cake. Top with the nuts and fruits. Brush with the remaining jam. Dry and let cool completely before serving.
