Fruit Yogurt, Herb Quark and Freshly Squeezed Orange Juice
- For the herb quark
- 250 grams Quark
- 2 tablespoons milk
- 1 sprig Dill
- 1 sprig Basil
- 1 sprig parsley
- 1 bunch Chives
For the orange juice: Cut the oranges in half and squeeze the juice using a juicer. Strain the juice through a fine mesh sieve to remove the seeds and pulp.
For the herb quark: Rinse the herbs, pat dry, remove the leaves and chop finely. Mix the quark with the milk until smooth, stir in the herbs and season with salt and pepper.
For the cereal: Rinse the berries and pat dry. Set aside half of the berries and coarsely chop the rest.
Mix the chopped berries with the sugar. Peel the apples, cut into quarters and remove the cores. Thinly slice one of the apple quarters for garnish, dice the rest and mix with the berries. Stir the yogurt into the fruit mixture and mix well. Divide the fruit yogurt into two bowls, top with the whole oats and granola and garnish with fresh mint and reserved apple slices and berries.
Serve the herb quark with toasted bread. Pour the freshly squeezed orange juice into glasses and fill to the top with mineral water.
