Ingredients

For the filling

Preparation steps

Peel the pears, core and cut into eighths. Drizzle with lemon juice and simmer gently in the white wine for around 7 minutes, until soft. Remove from the liquid and leave to cool.

Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.

Mix together the blue cheese and the cream and season with salt and ground black pepper.

Roll the puff pastry out on a floured surface to a size of approx. 30x12 cm. Spread the blue cheese mixture on top, leaving around 4 cm free at the edges. Arrange the pears on one (lengthways) half of the pastry, fold over the top half and press the edges together well. If desired, draw a pattern on the strudel with a fork.

Whisk together the egg yolks and cream and brush over the pastry. Place the strudel on the baking tray and bake in the oven for 30-35 minutes. Serve warm or cold, with blue cheese and white wine if desired.
