For the batter, add all the ingredients to a mixing bowl with a pinch of salt and mix using the whisks on an electric hand mixer to form a smooth batter. Leave to rest for 30 minutes.
Heat a little butter in a pan and add some batter. Spread to a diameter of around 12 cm and fry for 2-3 minutes on one side. Flip the pancake and finish cooking the other side. Remove from the pan and keep warm. Proceed until all the batter is used up.
Arrange the pancakes on plates with maple syrup, blueberries and vanilla ice cream. Serve dusted with icing sugar.
