1 For the batter, add all the ingredients to a mixing bowl with a pinch of salt and mix using the whisks on an electric hand mixer to form a smooth batter. Leave to rest for 30 minutes.
2 Heat a little butter in a pan and add some batter. Spread to a diameter of around 12 cm and fry for 2-3 minutes on one side. Flip the pancake and finish cooking the other side. Remove from the pan and keep warm. Proceed until all the batter is used up.
3 Arrange the pancakes on plates with maple syrup, blueberries and vanilla ice cream. Serve dusted with icing sugar.
