Place the sugar, vanilla extract, and cream in a saucepan and bring to the boil. Add the butter and allow to melt. Stir in the almonds, mixed peel, dried fruit and the raisins.
Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.
Using two teaspoons, place dollops of the mixture on the prepared baking tray and bake for 5-10 minutes until golden. Remove from the oven, leave to cool and then remove from the paper.
Melt the chocolate in a bain-marie, spread on the undersides of the florentines and leave to dry.
