Fruit and Nut Chocolate Bars
Melt the dark chocolate and coconut oil in a double boiler or heatproof bowl over a saucepan of simmering water. Stir in the sugar and mix well. Melt in a water bath, the coconut oil with chocolate. Add sugar stir. Coarsely chop the dried fruit and hazelnuts and fold into the chocolate mixture.
Remove the chocolate mixture from heat, mix in the eggs and allow to cool slightly.
Lay three of the wafer on a baking sheet lined with parchment paper and spread the chocolate mixture onto them. Top with the remaining wafers, cover with plastic wrap and refrigerate for about 12 hours. Cut into small cubes and store in a cool, dry place.
