Ingredients
- For the frozen parfait
- 150 grams Strawberries
- 8 Tbsps milk
- 60 grams sugar
- 2 packets Vanilla sugar
- 4 egg yolks
- 400 milliliters Whipped cream
- For the custard
- 400 milliliters milk
- 1 packet Instant pudding
- 1 Tbsp sugar
- 100 milliliters Advocaat
- For the elderberry sauce
- 200 milliliters Elderberry juice
- 2 packets Vanilla sugar
- 2 tsps cornstarch
- 4 Tbsps Currant liqueur
- To serve
- 100 grams Strawberries
Preparation steps
For the frozen parfait: Rinse, hull and chop the strawberries. Purée then strain through a sieve. Bring the milk to a boil with the sugar and vanilla sugar. Whisk the egg yolks in a bowl. Gradually whisk the hot milk into the egg yolks until creamy. Transfer to an ice bath and stir until cool. Whip the cream until stiff then fold in. Fold in the strawberry purée then freeze for 4-5 hours.
For the custard: Prepare the pudding powder according to package directions with the milk and sugar. Stir in the Advocaat and let cool.
For the elderberry sauce: Bring the elderberry juice and vanilla sugar to a boil. Whisk the cornstarch with the liqueur and then stir into the elderberry juice. Bring back to a boil then remove from the heat and let cool.
To serve: Rinse, hull and dice the strawberries. Arrange the custard, elderberry sauce and parfait on serving plates. Garnish with the strawberries to serve.
