Frozen Ricotta and Fruit Parfait
Combine the sugar and 2-3 tablespoons of water in a small saucepan. Bring to a boil and simmer until the sugar has melted and the mixture is syrupy. Combine the ricotta cheese, sugar syrup and maraschino liqueur in a large bowl and mix until smooth. Beat the whipping cream until stiff. Fold the whipped cream and candied fruit into the ricotta mixture.
Spread the mixture into a loaf pan lined with plastic wrap and freeze overnight. Remove the parfait from the loaf pan, slice and serve with fresh fruit, if desired.
