1 liter Raspberry ice cream
80 grams Almond slivers
150 grams Dark chocolate (65% cocoa)
200 grams Whole Wheat Butter Cookies
200 milliliters Whipped cream
1 packet whipped cream stabilizer
2 tablespoons powdered sugar
250 grams Raspberries
4 tablespoons Chocolate shaving (for decoration)

Preparation steps

1.

Line a 20 cm (approximately 8 inches) in diameter pan with about a 1 liter (approximately 4 cups) capacity with plastic wrap. Slightly thaw the ice cream and transfer into the pan. Smooth and chill for at least 30 minutes.

Chop the chocolate and melt over a pot of simmering water. Toast the almonds in a pan until light brown. Crumble the butter cookies in a blender and mix with the almonds and chocolate. Spread the mixture over the ice cream and chill for another 30 minutes in the freezer.

3.

Whip the cream with the stabilizer and sugar until stiff. Rinse the raspberries and pluck dry.

4.

Turn the ice cream cake out of the mold onto a large plate and remove the plastic wrap. Cover the cake with the cream and freeze for 10 minutes. Garnish with the raspberries and chocolate shavings.
