Ice parfait is one of the foods we should not eat every day. It is a luxury product for special occasions. Nevertheless, we can still benefit from vanilla, because it has been proven to reduce stress, and the pod can also help with sleep disorders. In addition, the essential oils it contains have an anti-inflammatory effect.

If you prepare the ice parfait for children, you should replace the Amarena cherries with other, unprocessed fruits. You can also replace the Amarettini with wholemeal biscuits to make the dessert a little healthier.

For the parfait
1 Vanilla bean
½ liter milk
¼ liter Whipped cream
7 egg yolks
200 grams sugar
4 centiliters Amaretto
For serving
40 grams Amaretti cookies
1 tablespoon sugar
12 Amarena cherry

Preparation steps


For the parfait, halve vanilla pod lengthwise and scrape out seeds with a sharp knife. Bring milk, cream, vanilla seeds and pod to a boil in a saucepan.


Mix yolks with sugar and Amaretto in a bowl until creamy.


Slowly add milk mixture in a thin stream to yolks and stir. Place everything back into pot, remove vanilla pod and stir over low heat with a wooden spatula until cream begins to thicken. Do not boil.


Pour cream into a metal bowl and cool over an ice water bath while stirring occasionally. Pour cream into 4 small metal ramekins about 5 cm (approximately 2 inches) in diameter. Freeze for 3 hours.


Remove parfaits about 10 minutes before serving. Place Amarettini in a freezer bag and crush with a rolling pin into small crumbs. Mix with sugar. Place parfaits on dessert plates and sprinkle with crumbs. Top with cherries and drizzle with cherry juice to serve.
