For the base: mix together the crumbs, butter and sugar and press into the base and sides of a 23cm|9" freezerproof pie or flan dish.
For the filling: spread the jam carefully over the base of the crumb case.
Beat the ice cream until softened but not melted. Quickly stir in the raspberries and spoon on top of the jam. Freeze overnight.
Put the pie in the refrigerator about 20 minutes before serving to soften slightly. Decorate with raspberries.
