Frozen Chocolate Parfait with Mixed Berries
Combine both types of chocolate in a metal bowl. Place bowl over a pan of barely simmering water and stir until melted. Let cool. Set another bowl over the pan of simmering water. Add egg and egg yolk and beat until foamy. Stir in melted chocolate and continue beating until mixture is very fluffy. Set bowl over another bowl filled with ice water and continue to beat until mixture is cold.
Beat double cream until smooth. Stir in heavy cream and fold into the chocolate mixture. Line a souffle dish (approximately 600 ml or 2 1/2 cups in volume) with plastic wrap. Pour chocolate mixture in, and freeze 6 hours. To serve, unmold and cut into slices. Garnish with mixed, sugared berries and mint.
