For the base
cup cream (38% fat)
2 tablespoons sweetened condensed milk
3 cups Chocolate Biscuit (cookie crumbs)
For the ice cream
2 cups cream (38% fat)
1.333 cups sweetened condensed milk
1 tablespoon instant Espresso powder
For the coating
4 ounces plain Dark chocolate (70% cocoa solids, chopped)
cup cream (38% fat)
½ cup sweetened condensed milk
To decorate
coarsely grated Chocolate
white and plain Chocolate heart

Preparation steps

1.
Line a 23cm|9" springform tin with a double layer of cling film.
2.
For the base: stir together the cream, condensed milk and crumbs until combined. Press into the base and halfway up the sides of the tin.

For the ice cream: stir together the cream, condensed milk and espresso powder in a mixing bowl. Whisk until soft peaks form and the mixture is smooth and fluffy.
4.
Spoon into the tin and smooth the top. Freeze for about 8 hours until firm.
5.
Heat together the chocolate and cream in a pan until the chocolate has melted.
6.
Stir in the condensed milk until no streaks remain. Pour over the top of the frozen cake and smooth the top. Freeze for about 20 minutes until the top is just firm.
7.
Remove the cake from the tin and press the grated chocolate into the sides. Decorate with chocolate hearts and serve immediately.
