4 eggs
100 grams sugar
1 pinch salt
50 grams Pastry flour
50 grams cornstarch

300 grams Blueberries
50 grams sugar
1 Tbsp lemon juice
200 grams Yogurt (0.1% fat)
150 milliliters Whipped cream

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

For the cake: Separate the eggs. Beat the yolks with 2/3 of the sugar until bright and creamy. Whisk the egg whites with the salt and remaining sugar until. Fold the egg whites into the yolks. Gently fold in the flour and cornstarch. Smooth the batter on a parchment-lined sheet tray and bake for 10-12 minutes.

Sprinkle a large kitchen towel with sugar. Turn the cake out onto the towel. Remove the parchment paper from the cake. Roll the cake with the towel into a roulade and allow to cool.

For the filling: Let the blueberries freeze for about 40 minutes. Puree with the sugar, lemon juice, and yogurt. Beat the cream until stiff, and fold into the puree.

Carefully unroll the cake and spread the filling on it. Reroll the cake again. Chill for at least 1 hour in the freezer.

6.

To serve: Remove about 5 minutes before slicing. Thaw slightly and cut into slices.
