For the yogurt
500 grams Yogurt (0.1% fat)
150 milliliters cream
40 grams powdered sugar
300 milliliters pureed Acai berry
2 tablespoons Acai berry powder
2 tablespoons lemon juice
For the brittle
100 grams caramel Candy
30 grams chopped Pistachio

Preparation steps

For the yogurt, mix the yogurt with the cream, powdered sugar, acai puree, acai powder and lemon juice. Refrigerate for about 1 hour, then freeze in an ice cream machine for about 30 minutes.

If you don't have an ice cream machine, beat the cream until stiff before folding into yogurt mixture. Pour into a shallow dish and freeze for at least 3 hours, stirring every 20 minutes (so that no large ice crystals form).

For the brittle, chop the candy finely in a mini processor. Melt with 3 tablespoons of water in a pan and cook until auburn in color. Add pistachios, stir to combine, then pour onto a non-stick baking sheet. Let cool and break into pieces.

Stir the frozen yogurt just before serving, and serve each bowl topped with a little brittle.
