1 Bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Brush, 1 Toothpick, 1 Freezer bag, 1 Oven rack, 1 Citrus juicer

Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 22cm|9" springformcake tin and sprinkle with sugar.

Beat the butter with the sugar in a mixing bowl until creamy, then add the eggs one at a time.
3.
Mix the flour with the baking powder and lemon zest and mix in, alternately with the milk, stirring well.

Spread half the blue berries on the bottom of the tin and spoon the mixture on top.
5.
Bake for 45-60 minutes, until golden and cooked through. Cool in the tin for 5 minutes, then place on a serving plate to cool completely.
6.
For the icing: sift the icing sugar into a bowl and beat in the lemon juice until smooth and thick. Spread over the top and sides of the cake. Top with the remaining blueberries and leave to set.
